Cooked Butterbur (Meowi namul)




Ingredients
200g butterbur
1 tablespoon soaked rice
1/4 cup green perilla seeds
1 cup water
For seasoning
1 teaspoon homemade soy sauce
a little salt
1 teaspoon chopped green onion
2 teaspoons chopped garlic
1/2 teaspoon sesame oil
1 tablespoon perilla oil
1 red pepper

Sprinkle salt on the chopping board and rub the stems of the butterbur on it.
After boiling the butterbur, dip in cold water and peel it. Cut in about 6cm and dip them in water again.
Soak the rice and perilla and grind them into fine granule. Add water to it and pass through a sieve.
Panbroil the butterbur with perilla oil , pour the rice and perilla water into the butterbur and boil it. Add green onions, garlic and sesame oil and season with salt and soy sauce. Put thin strips of red pepper lastly.
