Small Rolls of Boiled Dropworts




Ingredients
300g dropworts
2 eggs
2 red peppers
100g slices of boiled beef brisket
1 tablespoon pine nuts
- For Vinegar Red Pepper Paste
3 tablespoons red pepper paste
2 tablespoons vinegar
1 tablespoon sugar

Wash dropwort after cutting leaves and parboil it keeping its green color in broiled water with a little salt. Wash it in cool water.
Boil the whole beef brisket and slice it into 0.5cm¡¿4cm thin bars.
Separate eggs and fry yolks and whites separately in thick sheets, slice them into 0.5 by 4cm size. Make the same size bars with red pepper removed seeds.
Make vinegar red pepper paste with prepared stuffs.
Tie the slices of beef, yolks and white sheets and red peppers with 3 - 4 parboiled dropwort. Put pine nuts inside the ties.
Put the ties in a dish and serve them with vinegar red pepper sauce.
